Marinated Carrots

At Your Local Supermarket:
  • 1 lb. carrots
  • 1/2 cup vinegar
  • 1/4 tsp. paprika
  • 1/4 tsp. ground cumin

Instructions

  1. Wash, peel and cut carrots into thin strips. In a medium saucepan cook carrots and garlic in boiling water about 5 minutes or until just crisp tender. Drain.
  2. For marinade, in a small bowl combine vinegar, chopped parsley, paprika, coriander and cumin. Pour marinade over carrots. Cover and chill. Garnish with additional fresh parsley, if desired.
Serves: 6

Recipe Note: Parsley's color should be a rich, medium green with no yellowing leaves. Use quickly after purchase section of your refrigerator. Parsley is a wonderful addition to many dishes - simply chop it very fine and add to sauces, new potatoes, dressings and poultry dishes. Mix it with a little fresh lemon juice to make a satisfying salt-free seasoning. Combine it with basil to make a tasty variation of pesto sauce.
